I don’t do any surgeries, but you might ask Kellie whether she does with any regularity! I do get to see real-life brains on a frequent basis, however. They’re squishy and not quite as pink as you’d expect.
I saw your question and Jonathan’s suggestion that I reply. For my animal research we used to remove all the brains of our rats so I saw and dissected many of those. In medical school early on we dissected real preserved brains of people that donated their bodies to science after they died. As far as patients- while on surgery and anesthesia I have seen quite a few open brain surgeries. I am still amazed at how cool it looks in a real life live person. It throbs with the heart beat which is really cool to see. Science and medicine is pretty awesome!
